Like you, my tax return is pulled in a million directions. Considering the recent food and grain shortage warnings in the news, think about stocking your pantry, once you receive your return. These shortages were for wheat, grain, and corn. The corn prices will also affect canned corn, so stock up in this category. Don't forget your meats for canning. Look around for good prices and take advantage of them as well.

Home canned meats do last a long time. My son recently opened a jar of pork neck and it was as good as the day it was packed - two years ago. He mixed it in with a can of bbq beans, and it was delicious. If you are fearful of using these meats, just smell them and cook them a little longer than usual.
