Salmon Patties


2 (14.75 oz) cans Salmon (drained, boned, flaked)
1 egg
1/2 cup onion, chopped
1/2 cup bell pepper, chopped (red or green)
1/2 cup Italian style bread crumbs
1 Tbsp lime juice (or lemon juice)
1/2 tsp dry rosemary (chopped into small pieces to release flavor)
1/4 tsp ground black pepper
pinch of salt
  1. Combine all ingredients, except onion and peppers, into a bowl.
  2. In the frying pan you plan to use for cooking your patties, place a big dab of butter into it. Cook and frequently stir the onions and peppers until tender.
  3. Place the onions and peppers into the bowl along with the other ingredients. Stir well, then place in the refrigerator for about 30 minutes. The refrigeration time holds the patties together.
  4. Place a dab of butter, or vegetable oil, onto the bottom of the fry pan. Once melted, use a tablespoon and form patties into individual servings. 
  5. Cook them on medium-high until lightly browned on both sides.
Serves 8, with each person getting one patty. Serve with rice, fresh green beans, and coleslaw. Your family will love them!
