Growing & Using Culinary Herbs - Part 2

Substituting with Fresh Herbs
  • The ratio applies to all fresh and dried herbs. So, 2 tsp of chopped fresh sage = 2 Tbsp of chopped dried sage (or) 1/4 tsp of finely ground dried sage.
  • In the drying process, the oils within herbs become more concentrated.

Selecting and Keeping Herbs Fresh
  • When you select herbs in the grocery store, smell them. If they have been on the shelf too long, there will be less perfume and oil in the leaves.
  • To keep herbs fresh, you can keep them in a small ziploc bag, store them in a cool place, and a small paper towel within the package to keep the moisture down.
